A yummy recipe for cauliflower "rice" (minus the carbs!)

Save the carbs and have this delicious cauliflower rice for your dinner (serves 8)
Ingredients (go organic, if you can!):
1 head organic cauliflower
2 small (chopped) tomatoes
1/2 chopped onion
2 crushed garlic cloves
Crushed chili peppers (to taste)
1 tb of tomato paste
1/4 cup of chopped fresh cilantro
Grate the cauliflower. In a blender, mix the garlic, tomatoes, onion, tomato paste, pepper and crushed chili peppers until you obtain smooth consistence.
Preheat the oven to 350 F. Spray a shallow baking pan with minimum amount of oil.
Mix both blends and pour the result in the pan. Bake for 15 minutes, stir and bake for 20 minutes more.
When you serve, add the chopped cilantro and sprinkle some lime juice.
One serving: 28 cal, 1g fat, 91mg sodium, 5g carbohydrate, 1g fiber, 1g protein
